Farmhouse Pork Stew

This Bulgarian-inspired stew is rustic and full of flavour. It goes perfect with glass of Mavrud red wine.

Ingredients

  • 600 g Diced Pork Leg
  • 2 Medium Onions
  • 1 Carrot
  • 1 stick Celery
  • 100 g Celeriac
  • 1 Parsley Root
  • 6 Medium Potatoes
  • 2 Red Peppers
  • 1 l Chicken Stock
  • 250 g Chopped Тin Tomatoes
  • Salt, Ground Black Pepper, Paprika, Ground Cumin
  • Basil, Spring Onion

Instructions

  • In a deep saucepan over a high heat add 100g cooking oil and seal the pork.
    Peel and diced all vegetables in 2.5cm cubes.
    Remove the sealed pork and leave over kitchen paper to rest and remove the excess fat.
     In the same saucepan fry all the vegetables quickly and then add chicken stock and return the meat. Season with salt, black pepper, a little ground cumin and paprika. 
    Let it cook for 20 min. over medium heat until meat is nearly cooked.
    Peal and cut potatoes in big chunks and add them to the stew. Cook until potatoes are completely cooked.
    Serve with basil and chopped spring onion on top.
