Marble Cake with Walnuts and Chocolate

- 200 g Eggs
- 100 g Caster sugar
- 100+15 g Cake flour
- 50 g Melted Butter
- 100 g Dark Chocolate
- 15 g Cocoa Powder
- Vanilla Sachet
Place the eggs into a mixing bowl set over a pan of hot water. Add the sugar to the eggs and whisk until the mixture feels warm , about body temperature. Place the bowl onto a mixer and beat on high speed until the mixture becomes pale yellow and stiff. Add the vanilla. Put 1/4 of the mixture in another bowl. Add sieved 15g flour and 15g cocoa powder and fold lightly with rubber spatula to incorporate. Add sieved 100g flour to the rest of the mix and fold lightly with rubber spatula to incorporate. Add butter and mix gently. Pour one half of the plain mixture into a buttered and floured cake tin, then pour cocoa mixture on top and finish with plain mixture on top. Bake in preheated oven at 150C for 30-40 minutes until done.You may add some walnuts in the cake as well.Melt dark chocolate over water bath and pour over the cooled cake and decorate as you wish.
