Chicken Caesar Salad
Caesar salad is one of the most popular and well-known salads in the world. The salad is a green salad of romaine lettuce and croutons dressed in lemon juice, olive oil, egg yolk, Worcestershire sauce, anchovies, garlic, Dijon mustard, Parmesan cheese, and black pepper. Caesar Cardini, the Italian-born restaurateur invented it in 1924.

For the Salad
- 4 Gem Lettuce
- 16 Anchovy Fillets
- 2 Chicken Breast
- 100 g Croutons
- 60 g Parmesan
For the dressing
- 2 cloves Garlic
- 2 Anchovy Fillets
- 3 tbsp Lemon Juice
- 1 tbsp Dijon Mustard
- 1 tbsp o Worcestershire Sauce
- 20 g Grated Parmesan
- 300 g Mayonnaise
Slice chicken fillets lengthwise in half. Marinate them with a few cloves of garlic, lemon juice, vegetable oil or olive oil, thyme, salt, and black pepper. Leave them in the fridge for a few hours. For the dressing: With knife chop and paste one garlic clove and two anchovy fillets. In a bowl whisk garlic paste and anchovy paste, add the remaining ingredients. Season with salt and pepper. Leave the dressing in the fridge. Fry chicken fillets in a skillet little fat on both sides and keeps aside. Wash lettuce and let them dry. Put them in a bowl. Add anchovy fillets, croutons, and top chicken fillets. Grate Parmesan over the top and add the dressing.
