Potato Galette with Gorgonzola

Ingredients

  • 1 kg Potatoes peeled and diced
  • 1 Diced Onion
  • 200 g Diced Bacon
  • 300 ml Chicken Stock
  • 100 g Gorgonzola
  • 200 g Sour Cream
  • 1 sheet Puff Pastry

Instructions

  • In a deep frying pan with little olive oil fry diced potatoes and onion. 
  • Add bacon and fry another 2-3 min. 
  • Add chicken stock and turn down the heat. Cook until the stock reduced in half and potatoes are nearly cooked.
  • Add gorgonzola cheese in chunks and sour cream. Cook until cheese melted. Season with salt and black pepper and move aside.
  • Lay puff pastry in a ceramic dish. Pour potato mix and bake in preheated oven at 170C until golden brown. Serve with salad and glass of white wine.
