Potato Galette with Gorgonzola

- 1 kg Potatoes peeled and diced
- 1 Diced Onion
- 200 g Diced Bacon
- 300 ml Chicken Stock
- 100 g Gorgonzola
- 200 g Sour Cream
- 1 sheet Puff Pastry
In a deep frying pan with little olive oil fry diced potatoes and onion.
Add bacon and fry another 2-3 min.
Add chicken stock and turn down the heat. Cook until the stock reduced in half and potatoes are nearly cooked.
Add gorgonzola cheese in chunks and sour cream. Cook until cheese melted. Season with salt and black pepper and move aside.
Lay puff pastry in a ceramic dish. Pour potato mix and bake in preheated oven at 170C until golden brown. Serve with salad and glass of white wine. Bon Appetite.
