Brussels Sprouts with Bacon

Ingredients

  • 1 kg Brussels sprouts trimmed and halved
  • 6 Slices Bacon cut into pieces
  • 2 cloves Garlic minced
  • 4 Shallots
  • 60 ml Olive oil
  • 20 ml Balsamic vinegar
  • 200 ml Chicken broth
  • 1 t.sp. Honey
  • Chopped fresh thyme

Instructions

  • Heat a large nonstick skillet over medium heat. Add bacon, and sauté for 5 minutes until brown. Remove the bacon from pan with a slotted spoon.
    In the same pan add shallot, brussels sprouts and cook fot about 4 minutes. Add garlic and saute for 1 minutes stirring frequently, do not brown it.
    Add the chicken broth, and bring to a boil. Cook for 2 minutes or until the broth mostly evaporates and the sprouts are crisp-tender, stirring occasionally.
    In a bowl mix honey, balsamic vinegar, salt and freshly ground black pepper. Stirr in the brussels and sprinkle fresh chopped thyme. Serve imediately.
