Tomato and basil soup

Ingredients

  • 50 g Cooking oil
  • 1 onion chopped
  • 1 stalk celery chopped
  • 1 cloves garlic minced
  • 1 bunch fresh basil
  • 1 tin chopped tomato 375g
  • 1 l vegetable broth
  • Salt, ground black pepper, sugar
  • 1 tbsp tomato paste

Instructions

  • In a large pot add oil, onion and garlic over medium heat. Cook for 3 minutes until onions are translucent.
  • Add salt, pepper, tomato paste, basil, chopped tomatoes and broth. Bring to a boil.
  • Reduce the heat and simmer for 15 minutes covered with lid.
  • Remove from the heat, add fresh basil and blend with a stick blender.
  • Bring back to the medium heat and add one tea spoon sugar. Adjust the salt and sugar according to you taste.
  • Allow to cool 2 minutes and serve topped with croutons, hard-boiled egg quarters, parmesan shavings or cream.
