Tomato and basil soup

Salt, ground black pepper, sugar

Instructions
In a large pot add oil, onion and garlic over medium heat. Cook for 3 minutes until onions are translucent.
Add salt, pepper, tomato paste, basil, chopped tomatoes and broth. Bring to a boil.
Reduce the heat and simmer for 15 minutes covered with lid.
Remove from the heat, add fresh basil and blend with a stick blender.
Bring back to the medium heat and add one tea spoon sugar. Adjust the salt and sugar according to you taste.
Allow to cool 2 minutes and serve topped with croutons, hard-boiled egg quarters, parmesan shavings or cream.
