Crepes Suzette

Ingredients

For the Crepes

  • 200 g White flour
  • 440 g Milk
  • 125 g Sparkling Water
  • 100 Eggs
  • Pinch Pinch of salt and sugar

For the Beurre Suzette

  • 260 g Orange Juice
  • 15 g Orange zest
  • 200 g Sugar
  • 80 g Butter
  • 100 g Grand Marnier

Instructions

  • Mix all the ingredients for crepes and leave in fridge for 2 hours or overnight.
    In a frying nonstick pan add little oil and heat it. Fry at least 8 crepes and leave aside.
    In the same pan warm orange juice and zest.
    In separate pan, cook the sugar to a golden caramel. Remove from the heat and add butter. Stir to dissolve caramelized sugar. Add warmed juice and reduce it by 1/3 stirring continuously.
    Add the Grand Marnier, handling the skillet carefully because of the flame.
    Then add the crêpes to the pan to coat both sides in the orange syrup.
    Serve warm with few orange segments.
