Pasta Salad Kalina

This salad was created by my daughter Kalina and it is one of my favourite. Combination between pasta, buffalo feta and vegetables is absolutely perfect. The addition of rocket lettuce gives  freshness and the green pesto dressing is the one you will ask for more to add on. This salad can be served as a starter or light main meal with freshly baked garlic bread and glass of white wine. Bon appetite.

Ingredients

  • 200 g Penne Pasta
  • 12 Cherry Tomatoes
  • 200 g Buffalo Feta Cheese
  • 12 Black Olives
  • 12 Mushrooms
  • 100 g Rocket Lettuce
  • 30 g Pumpkin Seeds
  • 50 g Green Pesto
  • Olive oil, Vinegar, Salt, Sugar, Black Pepper

Instructions

  • 1. In a sauce pan with boiling water and salt cook pasta according to the instruction on the packet. Wash with cold water and drain it.Stir in half of the pesto and leave aside.

     In a bowl mix olive oil and vinegar in 3 to 1 proportion, add the rest of the pesto, salt, sugar and pepper.
    Cut Cherry tomatoes in half.
    Slice mushrooms in thin slices.
    Dice Buffalo Feta.
    Add all the ingredients to the dressing bowl and mix gently.
     Arrange the salad as it's on the picture and drizzle the dressing on top.
