Lyonnaise Potatoes
Lyonnaise potatoes is a French dish of sliced pan-fried potatoes and thinly sliced onions, garnished with parsley. Lyonnaise means “from Lyon”, or “Lyon-style”, after the French city of Lyon.

- 900 g Potatoes
- 4 Sliced Medium Onions
- 100 g Butter
- 100 g Cooking Oil
- Chopped Parsley
-Place the potatoes in a pot of salted water. Bring the potatoes up to a boil and blanch for 5 minutes. Remove the pan from the heat and cool under cold running water, drain and let them dry. -In a large sauté pan, heat the oil and add the onions. Season with salt and pepper. Sauté the onions until caramelized. Turn the onions into a bowl. -Place the pan back on the stove and add butter. Heat it and add potatoes in bunches and sauté until golden and crispy. Plaice them over kitchen roll. -Mix all sautéed potatoes with caramelized onions, season and sprinkle with chopped parsley and serve.
