Hash with German Sausages and Dressed Asparagus

For the Hash
- 500 g Cooked Sausages
- 4 Pealed and boiled Potatoes
- 1 Red Pepper
- 2 sticks Spring Onion
- 4 Eggs
- Thyme,Salt, Papper
For the dressed Asparagus
- 1 bunch Green Asparagus
- 1 bunch Parsley
- Olive oil, Vinegar, Salt, Sugar, Pepper
Hash
In a large skillet fry diced potatoes until golden brown.
Stir in chopped sausages and cook 5 min.
Add chopped spring onion and red pepper; cook until tender. Reduce heat; cook and stir for 10 minutes or until lightly browned and heated through. Season with salt, pepper and thyme.
Dressed Asparagus
In a skillet with little oil cook Asparagus until soft but still crunchy. Leave them aside. Make basic vinaigrette with olive oil, vinegar, salt, pepper and sugar. Add chopped parsley and finely chopped red pepper for colour. Mix with asparagus.
Serve hash with one fried egg on top and dressed asparagus on side.Bon appetite.
