- 1 kg Beef Shank with Bone
- 2 Medium Onions
- 3 Carrots
- 3 sticks Celery
- 1/4 Celeriac
- 6 Medium Potatoes
- 1 tbsp Tomato Paste
- 1 tsp Paprika
- Parsley, Thyme, Bay Leaves, Sage, Oregano
In deep saucepan add 2l of water, beef shank, carrots, celery, celeriac and onions all peeled and chopped in big chunks. Add also all the herbs, whole black pepper and leave a little parsley for serving. Let it boil and then turn down the heat to simmer for 1.5-2 hours. Sieve the stock and keep the meat and vegetables aside. In the same saucepan make brown Roux with butter and flour. Gradually add beef stock stirring continuously. Add tomato paste, paprika and peeled and chopped potatoes. Season with salt and pepper and let it cook until potatoes are soft Optional you can add diced smoked bacon for more flavour. Cut cooked carrots, celery and celeriac, cooked beef deboned and chopped and stir in the stock and potatoes. Add few drops of Worcester Sauce and pinch of sugar. Serve with chopped parsley and toasted bread.
